Loaf Ingredients
- 500 g minced steak (or use 1 kg mince)
- 500 g sausage mince
- 1 tablespoon chopped parsley
- 2 onions
- 1 cup fresh breadcrumbs
- 1 egg (sometimes use 2 eggs)
- 1 dessertspoon curry powder
- Salt and pepper
- ½ cup milk
- ½ cup water
Method
- Mix together the sausage mince, minced steak, breadcrumbs, parsley, onion, egg, curry powder, salt and pepper.
- Gradually add the milk and water, mixing until smooth.
- Shape into a loaf and place into a greased baking dish.
- Bake in a moderate oven for 30 minutes.
- Pour the sauce over the meat loaf and return to the oven for 45 minutes, basting frequently. (I find every 10 minutes is a good amount)
- Serve hot with vegetables, or cold with salad.
Barbecue Sauce
“I often double these quantities.”
Ingredients
- ½ cup water
- ½ cup tomato sauce
- ¼ cup Worcestershire sauce
- 2 tablespoons vinegar
- ¼ cup brown sugar
- 1 teaspoon instant coffee
- 30 g margarine (can leave out)
- 2 tablespoons lemon juice
Heat the sauce ingredients in a saucepan. Don’t worry about brining it to the boil, it should just be warm and combined.
You can use butter or oil instead of margarine.
