Barbecue Meat Loaf

Loaf Ingredients

  • 500 g minced steak (or use 1 kg mince)
  • 500 g sausage mince
  • 1 tablespoon chopped parsley
  • 2 onions
  • 1 cup fresh breadcrumbs
  • 1 egg (sometimes use 2 eggs)
  • 1 dessertspoon curry powder
  • Salt and pepper
  • ½ cup milk
  • ½ cup water

Method

  1. Mix together the sausage mince, minced steak, breadcrumbs, parsley, onion, egg, curry powder, salt and pepper.
  2. Gradually add the milk and water, mixing until smooth.
  3. Shape into a loaf and place into a greased baking dish.
  4. Bake in a moderate oven for 30 minutes.
  5. Pour the sauce over the meat loaf and return to the oven for 45 minutes, basting frequently. (I find every 10 minutes is a good amount)
  6. Serve hot with vegetables, or cold with salad.

Barbecue Sauce

“I often double these quantities.”

Ingredients

  • ½ cup water
  • ½ cup tomato sauce
  • ¼ cup Worcestershire sauce
  • 2 tablespoons vinegar
  • ¼ cup brown sugar
  • 1 teaspoon instant coffee
  • 30 g margarine (can leave out)
  • 2 tablespoons lemon juice

Heat the sauce ingredients in a saucepan. Don’t worry about brining it to the boil, it should just be warm and combined.

You can use butter or oil instead of margarine.
